Grilled Tomato and Sweet Pepper Soup

Tomato Soup is the perfect comfort food. Fresh tomatoes, Sweet peppers, garlic, lots cumin and fresh herbs are perfectly cooked to create a sweet, tangy, spicy bowl of goodness! Why waste your time and money on the processed canned stuff when you can simply make your own.
While there are many perfectly great recipes for this, here’s my take on it.
Ingredients:
3 Medium Roma Tomatoes
3 Sweet Peppers
2 Garlic Cloves Chopped
1/2 Onion Chopped
1/2 tsp Chili Ginger Paste
1 tbsp Trader Joe’s Roasted Red Pepper Spread
2 Cups Vegetable Broth
1 Cup Water
2 tsp Grape Seed Oil
2 Small Bay Leaves
1/4 tsp Cumin Seeds
1/4 tsp Coriander Seeds
1/4 tsp Chili Powder
1/4 tsp Turmeric Powder
1/4 tsp Cumin Powder
1 tsp Ground Roasted Cumin
4-6 Fresh Basil Leaves
10-12 Sprigs of Cilantro

Directions
Cut and seed peppers in half; Cut tomatoes in half
Heat up stove top grill on medium heat
Add 1 tsp Grape Seed oil and add peppers and tomatoes
Grill for about 5 minutes on low-medium heat until the skin starts browning and juices release from the tomatoes. Flip tomatoes and peppers as needed
In a pot, heat up 1 tsp Grape Seed Oil on low-medium heat
Add in 2 Small Bay Leaves, 1/4 tsp Cumin Seeds, 1/4 tsp Coriander Seeds, chopped Garlic and Onions
Add a pinch of salt.
Mix in 1/2 tsp Chili Ginger Paste, stir and cover for 2-3 minutes
Add in fresh basil and cilantro and cook uncovered for 2 minutes
Add in grilled tomatoes and peppers (feel free to add in the juices from the grill pan)
Pour in 2 cups of vegetable broth, stir and cover for 5 minutes
Carefully remove Bay Leaves
Using a hand-blender, carefully blend it until no large chunks remain
Add in 1 tbsp Trader Joe’s Roasted Red Pepper Spread Simmer uncovered for 3 minutes and let it slightly thicken up
Taste and adjust salt as needed Stir in 1 cup of water, cover and simmer on low Serve and garnish with fresh basil and cilantro
