Winter Libations

The Divine Pear


INGREDIENTS


3/4 OZ Pear Puree*

1/2 OZ Lemon Juice

3/4 OZ Elderflower Liquor or Triple Sec

1 1/2 OZ Gin

2 Dashes of Angostura Bitters or Orange Bitters (optional)


METHOD

1. In a cocktail shaker, add all ingredients

2. Add ice and shake well

3. Strain into chilled coupe or cocktail glass


GARNISH

2 grates of Nutmeg or Lemon Twist


*Pear Puree

1 ripe Pear or Apple

1/2 tsp Lemon Juice


Peel skin and Roughly chop 1 Ripe Pear or Apple

Add ½ tsp of Lemon Juice to avoid browning

Blend until smooth and bottle


Alternate Option: Apple Sauce

For extra flavor, blend in ripe persimmon and/or ¼ tsp fresh ginger


Maple Spiced Sour


INGREDIENTS

3/4 oz (1.5 tbsp) Fresh Lemon Juice

3/4 oz (1.5 tbsp) Maple Syrup

1/8 TSP Pumpkin Pie Spice or 5 Spice Blend

2 thin slices of Ginger

1 tbsp Egg White or Aquafaba (optional)

2 dashes Angostura Bitters

2 oz (4 tbsp) Spirit of your choice -- Bourbon, Rum, or Gin recommended


METHOD

1. In a cocktail shaker, add lemon juice, maple syrup, pumpkin pie spice, bitters and 2 slices of ginger

2. Muddle gently for about 5-6 seconds, enough to release some juices from ginger

(Optional - add 3-4 rosemary leaves for extra flavor)

3. Pour in Egg white or Aquafaba and spirit of your choice

4. Add ice and shake well

5. Double Strain into chilled coupe or cocktail glass or on the rocks in a old fashioned glass


GARNISH

Freshly Grated Nutmeg, Spring of Rosemary and Lemon Twist


Cranberry Hot Toddy


INGREDIENTS

1 TBSP Cranberry Sauce OR 1 TSP Jam from any berry

1/4 oz Fresh Lemon Juice

1/2 oz Maple Syrup

1/8 TSP Pumpkin Pie Spice or 5 Spice Blend

2 oz Spirit of your choice - Blended Scotch, Rum or Bourbon recommended

2 oz Hot, Boiled water


METHOD

1. In a cocktail shaker, add cranberry sauce, lemon juice, spiced maple syrup and blended scotch

2. Dry shake without ice to mix all ingredients

3. Double strain into a tall mug

4. Top with hot water and stir gently to mix


GARNISH

Sprig of Rosemary, Lemon peel or cinnamon stick



Wintery Old Fashioned

INGREDIENTS

2 OZ spirit (Rye, Gin, Rum, etc)

1 TSP Maple Syrup

1 pinch 5 Spice Blend

3-4 Rosemary leaves

2 dashes Aromatic Bitters


METHOD

1. Add Maple Syrup, Rosemary Leaves, 5 Spice Blend & Bitters into a chilled Old Fashioned Glass

2. Gently Muddle and add large cube/block of ice

3. Add Spirit of your choice and Stir for 8-10 seconds


GARNISH

Lemon or orange peel, brandied cherry or sprig of fresh rosemary


Rosemary Boulevard

INGREDIENTS

15-20 Fresh Rosemary Leaves (leaves from 1 sprig)

3-4 Sage or Thyme Leaves (optional)

3/4 OZ Campari

3/4 OZ Sweet Vermouth

1 OZ Bourbon or Rye Whisky


METHOD

1. In a mixing glass, add herbs along with Campari and Sweet Vermouth

2. Muddle for 8-10 seconds

3. Add in Bourbon or Rye and Stir for another 10-12 seconds

4. Double Strain into Old Fashioned glass over Ice or into cocktail glass


GARNISH

Lemon or orange peel, brandied cherry or sprig of fresh rosemary


Hot Buttered Rum

INGREDIENTS

1 TSP Brown Sugar

1 TBSP Butter (Room Temperature)

1/4 TSP 5 Spice or Pumpkin Pie Spice Blend

2-3 Slices Ginger (Optional)

2 Dashes Angostura Bitters

1.5 or 2 OZ Rum

Hot water - 5-6 OZ if using 1.5 OZ rum, 6-8 OZ if using 2 OZ


METHOD

1. In a tall coffee mug, add brown sugar, butter, 5 spice blend and bitters

2. Add 1-2 OZ Hot Water and stir until butter and sugar are dissolved

3. Add Rum and remaining hot water

4. Stir well until it's a uniform consistency


GARNISH

Sprig of Rosemary, Lemon peel or cinnamon stick
